How to Cook All the Extra Zucchini From Your Garden

Zucchini and I have a love-hate relationship. 

I love eating them! Fresh sautéed zucchini is one of the meals I look forward to every summer. I love that zucchini is almost impossible to kill and it reliably produces every year. Two zucchini plants produce more than enough zucchini for my entire family, so it barely takes up any space in the garden. 

On the other hand, I always plant double or triple the number of plants that we actually need every year. By the beginning of August without fail I end up buried in zucchini! It takes over the whole kitchen, we start eating it at every meal, and eventually nobody ever wants to see another zucchini again, much less eat anymore. Not to mention, it is impossible to give it away because everybody I know has more zucchini than they need too! I usually manage to give some to a few friends without gardens, but eventually even they start running the other direction when they see me coming with zucchini in hand. Honestly, it’s a bit ridiculous. 

Fortunately, I have collected some amazing recipes for zucchini that help my family get excited about eating zucchini for the fourth or fifth time in a week. Here’s some of my favorite zucchini recipes, enjoy!

Easy Cheesy Zucchini Bake

My kids love this recipe! This is one of my go to recipes when we have eaten zucchini a ton and everybody is sick of it. I never get complaints about dinner when I fix this dish!

Zucchini Bread

Zucchini Bread is wonderful because you can freeze it for later. Not that I usually have any leftover to freeze unless I make a huge batch. 

The other great thing about making zucchini bread is that you can freeze the shredded zucchini if you don’t have time to make it into zucchini bread! This is an extra bonus if you’re trying to hide the zucchini because pre-frozen zucchini melts into the bread. The kids will never know that it’s in there!

Buffalo Chicken Zucchini Boats

This recipe is absolute heaven! Seriously, this is one of my favorite ways to cook zucchini boats! It’s cheesy, gooey, buffalo-ey goodness and I love it served with a side of ranch. 

If you’re not a fan of the heat that comes with the buffalo sauce, just mix it 50/50 with melted butter to reduce the spiciness. 

Chicken Zucchini Casserole

My mom used to make a zucchini casserole similar to this and this recipe is the closest that I’ve found to her original recipe. The stuffing on the top is so crunchy and makes a great contrast to the softness of the zucchini inside. 

I like to add some cheese into this casserole too, just because everything is better with cheese!

Sautéed Zucchini Parmesan

Zucchini sautéed in olive oil with a little salt and pepper is one of my favorite side dishes, but the addition of Parmesan cheese and some spices kicks up the flavor a ton. This is a great side dish for when I want to make something that seems fancy but is actually super easy and fast to make! 

Oatmeal Raisin Zucchini Cookies

Zucchini cookies are right up there with zucchini bread on my list of favorites! I love how tender and moist these cookies are and the addition of the raisins makes them absolutely amazing. 

I also love the fact that these cookies are made with honey! It’s so nice  to find a delicious recipe that doesn’t have tons of white sugar in it!

Cool Ranch Zucchini Chips

Zucchini Chips are the perfect solution when you want something crispy, crunchy, and healthy! I love these as the recipe is, but I also like to add just a little bit of chili powder to them as well. I think it adds the touch of heat that takes these chips from good to great!

Zucchini Lasagna

I love zucchini lasagna, probably more than regular lasagna. This recipe is one that I love, but really, you can use any lasagna recipe that you like. 

The one thing to remember is that whatever sauce you are using needs to be pretty thick. Zucchini adds a lot of moisture to whatever you’re cooking it in, so if your sauce starts out runny, it will just get runnier. 

Zoodles

Zoodles, or zucchini noodles can be substituted for pasta in almost any dish. I love to make fettuccine alfredo with zoodles and they’re amazing in spaghetti too. While I love spiralized zoodles they’re also really easy to make with a vegetable peeler. Zoodles made with a vegetable peeler don’t turn out round, but they taste just as good.
