Quick and Easy Beef Stroganoff

I have a secret.

Well, it’s not a secret. It’s actually pretty obvious to anyone who knows me.

Ready? 

Here it is, I really hate grocery shopping sometimes. 

I mean honestly ya’ll. I have a 5 month old baby. Do you understand what grocery shopping is like with a smiley, friendly 5 month old? Not only do I have to pack his huuuuge car seat into the store, but once we’re in there I can’t make it through an aisle without someone stopping me to chat about how cute he is. 

Or worse! A couple weeks ago I was putting milk in the cart, I turned around and some random lady was reaching into his car seat to UNBUCKLE HIM! I about had a heart attack. For those who don’t know, you don’t take peoples babies out of their car seats! NO! Don’t do it! Scared me to death! 

Anyways, that’s a rant for another day. Suffice it to say, I don’t love grocery shopping at the moment. But, for some reason, everybody still thinks they need to eat. Crazy right?

This has been my go to recipe for years. I always have the ingredients on hand, they’re part of my pantry essentials list. Plus it only takes two pans, so clean up is a breeze!  My mom used to feed it to us when we were kids and now I feed it to my kids. It’s also very scale-able (it’s a real word!) so when you’re feeding more people it’s easy to make more or vice-versa.

The trick to getting this on the table super-fast is to have several things going at once.

So, first we’re going to fill our pot for the noodles up with water and put it on the stove to boil. Put a lid on it and it will come to a boil faster. While we’re waiting for the water to boil, start browning the hamburger. 

Sprinkle in the onion flakes, garlic salt, celery salt, beef bouillon, and salt and pepper. All the seasonings can be adjusted for your taste. We tend to go a bit heavier on the garlic at my house, because I love it, but you can adjust all the seasonings to your preference. 

Don’t like garlic? Leave it out, I’ll only judge you a little. (Just kidding I won’t, BUT garlic is necessary for happiness!)

By this point the water should be boiling, so add the egg noodles and a pinch of salt. Turn the heat down a bit and take off the lid so it doesn’t boil over. 

Once the beef is browned, sprinkle it with flour and stir well. By adding the flour to the burger you don’t have to worry about it clumping like you would if you add the liquids and then try to thicken it. Then we’re going to add the cream of mushroom soup, sour cream and milk. 

Give it a good stir so it’s all mixed in well and let it come back to a simmer over medium heat. Stir it every minute or so to keep it from scorching. You may need to add a bit more milk if the gravy is too thick, I find it really depends on how much fat was in the ground beef.

While you’re waiting for the gravy to simmer check the noodles, they should be done or close to done depending on how long you took making the gravy. Drain them and put them back in the pot with the lid on while the gravy finishes. 

Once the gravy comes back to a simmer, it’s ready to eat! I don’t mix the gravy and noodles together before serving, but you certainly can. I like to serve green beans with beef stroganoff, I just think they go really well together.

That’s it! Super simple, quick, and very little mess! This recipe makes enough to feed three hungry teenagers, plus my husband and myself.

Beef Stroganoff

Time: 15 minutes 
Ingredients
  • 1 lb. ground beef, thawed
  • 1 tbsp. dried onion flakes
  • ¼ tsp garlic salt (to taste)
  • Pinch of celery salt
  • ½ tbsp. beef bouillon (optional)
  • Salt and pepper to taste
  • 2 tbsp. flour
  • 2 10 oz. cans cream of mushroom soup
  • ¼ cup sour cream
  • 1 cup milk
  • 1 16 oz. package egg noodles
  1. Bring water to a boil, add the egg noodles and a pinch of salt. When cooked (about 7 minutes at a boil) drain and set noodles aside until the gravy is done.
  2. While the noodles are cooking, season and brown the hamburger, add flour to the burger and mix in.
  3. Add the cream of mushroom soup, sour cream, and milk, bring to a simmer, add more milk if necessary for a gravy like consistency.
  4. Serve and enjoy!
