Homemade Pancakes- Feed Your Whole Family for Under $1!

This is the meal that I think of when I think about my childhood. 

My mom used to make pancakes for breakfast every single morning when I was growing up. I never realized growing up that this was a way to save money, I just thought that it was what moms did. It wasn’t until I was older that I realized that not everybody’s mom made them pancakes before school every morning.  

With 6 hungry kids to feed, this was probably one of the most economical breakfasts out there. This recipe is literally under a dollar to feed a family! That’s not a dollar a serving, it’s a dollar for your entire family’s breakfast. 

This makes enough to feed my family of five, but you can easily double it if you need to. As it’s written it makes about 16-18 four inch pancakes.

This is a super quick and easy recipe. And the best part is, if you’ve started stocking your pantry using my pantry building method you have everything you need in your pantry already!

 First, you’ll want to turn your electric griddle on to about 325°. The griddle is hot when you put a drop of water on it and it sizzles and evaporates quickly.

 You can cook pancakes in a frying pan on the stove, but if you’re cooking for a family it will take forever! Seriously, just use a griddle and then you can make six or so pancakes at a time instead of one at a time. If you’re trying to cook these before school in the morning you’ll be glad you decided to do it this way.

Then measure out the flour, salt, baking powder, and sugar into a bowl. Mix it together a little.

Add the milk, egg and oil and mix with a wire whisk. Don’t overmix! If you overmix them your pancakes will turn out flat and tough instead of fluffy and light. DON’T OVERMIX!!

Then scoop or pour your pancake mix into circles on your griddle. I use a measuring cup as a scoop, but you can also pour straight from your bowl if you’re talented like that. I’m not talented like that, I end up making a mess when I try to pour, so I scoop and usually make a mess anyways. 

The pancakes take about 3-4 minutes on the first side, but honestly I don’t time it. You’re looking for your pancakes to have lots of bubbles on top before you flip them.

Then flip them over and let the other side cook. It doesn’t take nearly as long as the first side, probably about 2 minutes. 

I just check them by lifting them slightly with the spatula once I start getting impatient. As soon as the bottom has some color they’re done!

The only pictures I have of them cooked is on the griddle. I made a plate to take a picture to show you guys. It had a stack of pancakes with butter and syrup, bacon, and a fried egg. Perfect breakfast picture. 

I turned around to put more pancakes on the griddle, turned back to take a picture and it was gone! My dear, sweet, sooo lucky I love him husband ate them all before I got a picture! 

He says it was good though, so there’s that. You’ll have to take his word for it and look at the super yummy pancakes while they were still on the griddle instead. 

Mom’s Pancakes

Time: 10 minutes 
Ingredients

·         2 c. flour

·         1 tsp salt

·         3 tsp baking powder

·         2 tbsp. sugar

·         2 c. milk

·         1 egg

·         1/3 c. oil

 

1. Preheat griddle to 325°

2. Mix flour, salt, baking powder, and sugar. 

3. Add milk, egg, and oil. Mix just until combined. Do not overmix! 

4. Cook for 3-4 minutes or until there are lots of bubbles on the top of the pancakes. 

5. Turn and cook for 2 more minutes or until the bottom is lightly browned. Serve hot with butter and syrup.
